Egg Sizes
Our girls lay all sizes, starting out with PeeWees when they begin laying. They graduate to small, medium, then more of the larger sizes when they are about 10 months old. As they get older, the eggs get bigger. After their molt they lay more extra larges and jumbos.
It's not common to see PeeWee nor Small eggs for sale. We use and sell all sizes. The PeeWee are great as appetizers, in salads or as that quick small snack. They can be pickled or hard boiled. They also are wonderful if you need to cut a recipe that calls for eggs in half. We treat the small eggs the same way - just a little bit more goodness!
Many people are already familiar with medium eggs. Most recipes call for large eggs and they are commonly seen for sale. Extra large and jumbo eggs make for a hearty breakfast, or make those muffins raise a little better! In the jumbo eggs you may find the double yolkers.
So, to help you cook with the varing sizes of eggs here is a helpful chart.
If the recipe calls for Large: You can substitute these sizes in the following quantity:

Weights of the different sizes ranges:
PeeWee weighs about 1.25 oz per egg
Small weighs about 1.50 oz per egg
Medium weighs about 1.75 oz per egg
Large weighs about 2.0 oz per egg
Extra Large weighs about 2.25 oz per egg
Jumbo weighs about 2.5 (or more) oz per egg
